Vegan Tuna Tarragon Pasta Salad

Okay, guys. Hear me out! This is the greatest pasta salad of all time, and lucky for you, this recipe makes a lot, so you can share with friends. Just in time for some Spring and Summer cookouts! When I was a kid, my dad used to take us to Sweet Tomatoes all the time. They have a tuna tarragon pasta salad. It was my favorite thing ever, and frankly one of the only things I have truly missed after going vegan. Yesterday, I smiled, I was so damn excited! This tastes exactly like what I have been missing all these years, and I am so happy to share it with you!

Vegan Strawberry Buttermilk Biscuits

Spring is upon us, which means this is the start of my two favorite fruit seasons in a row. Spring and Summer are the times my favorite fruits are in season, cheap, juicy and itching to be used in some recipes! Strawberries and watermelon are the reigning champs in my love for fruit battle. I actually really like the cold weather, so fruits and veggies are really the only reason I look forward to Spring and Summer. These, vegan strawberry buttermilk biscuits are definitely sweetening the pot. Strawberries are every where right now, and I HAD to make something amazing with them!

Vegan Tofu Sticky Fingers with Blue Cheese Dip

Have you ever been to Wingers? They have this chicken appetizer called Sticky Fingers. The sauce looks and smells amazing. I have always wanted to try all their sauces, but alas, they have no fake chicken. Come on everyone. Every place should have a vegan option for me, geez. Well, I can just do it myself then. Here is my take on their signature chicken made vegan. The sauce is out of this world, I baked them instead of frying them. Paired with the best damn vegan blue cheese sauce. YES!

Vegan Copycat Buster Bars

On Valentine’s day, my mother in law took our daughter out to eat so that my husband and I could have a few minutes alone, which is pretty rare. She took our daughter to Dairy Queen for ice cream after they ate, and she came home eating her ice cream. It got me thinking about how much I loved Buster Bars when I was a kid. I can imagine by now you can pick up on my thought process. No non vegan food will hold me back. I shall make it vegan and I shall make it vegan immediately. So, you are welcome for these Vegan Buster Bars.

Vegan Pimento Goat Cheese Spread

One of our favorite restaurants in town serves Southern food with a modern twist. They have a all kinds of really awesome things that I think are really genius. However, the idea that always strikes me as brilliant is their Pimento goat cheese spread. My husband gets it all the time, and the fact that it is not vegan is not going to stop me from making some. I told my husband I was going to make a Vegan Pimento Goat Cheese Spread that would taste even better than the one he always eats. That is a challenge, and the challenge was accepted.
